When I first started Myshrooms as an Instagram page year and a half ago it was all about the recipes and sharing both my obsession for food and all things fungi. As Myshrooms took up the snack heaven route and hardcore markets the time to cook and create diminished. So tonight is a big night, this is the long-awaited web blog I always said I´d start and the first ever, so what best way than for it to be a tastetastic recipe. 

I was attempting to make some Shiitake bacon and by mistake ended up with Jerky. I marinated it for 3 days, just because. I wasn´t spending any time in and ended up making it before it went off.
It turned out to be perfect, small full of flavor chewy bits. I snacked on them on their own, added some to the pear and parsnip soup in the photo and sprinkled them on some avocado on a quick hunger trip to the kitchen.

I oven cooked before dehydrating them but will probably chuck them into the cast iron pan next time before dehydrating them. The times will vary depending on what you have at home but I will update this post as I discover the best method. I dehydrated them to get

15 minutes preparation time
4 hours cook time


  • 1 Shiitake punnet

  • 1 tbsp extra virgin olive oil 

  • 1 tbsp Worchestershire sauce 


  • 1 tbsp maple syrup


  • 1 tbsp apple cider vinegar

  • 3 tbsp Tamari

  • 1/4 tsp salt

  • 1/4 tsp garlic powder


  • 1/2 tsp smoked paprika


  • 1/4 fine diced onion


  1. Add all liquid ingredients to a bowl, big enough to fit all the ingredients listed, and mix

  2. Stir in the dry ingredients until combined

  3. Add the onion and stir 

  4. Thinly slice the shiitake mushrooms

  5. Mix in the mushrooms until they are all coated. Cover and leave them to marinate overnight in the fridge

  6. Heat oven to 175ªC

  7. Spread the mushrooms out over a large baking sheet and transfer them to the oven for 20 min. Make sure to stir them a few times, so that they crisp up evenly. You want them to end up browned and dry

  8. I couldn't get them to dry with my oven without them burning so I then dehydrated them at 50ºC for 4 hours. If you don't have a dehydrator lower your oven temperature and check on them often until they have dried out.
